Las piedras de moler, conocidas en México como metates, son una fuente de información arqueológica, histórica y etnológica que ha sido todavía poco explorada. Ciertos actores de la sociedad han vuelto hoy en día la mirada hacia este artefacto por su origen precolombino a raíz de la inscripción en 2010 por parte de la UNESCO de la cocina mexicana como Patrimonio Cultural Inmaterial de la Humanidad. Existe hoy, así, una efervescencia de investigaciones en comunidades indígenas por parte de antropólogos, sociólogos e historiadores de la alimentación entre otros, para resaltar más aún esta designación. Y ello sin hablar del mundo de la gastronomía, donde cocineros, chefs o promotores culturales han reactivado todo aquel bien material o inmaterial de carácter indígena como símbolo de identidad mexicana.
Este libro analiza el metate y la actividad de la molienda desde una perspectiva interdisciplinaria, donde cada disciplina indaga y genera nuevos juicios sobre la comprensión de este artefacto. Igualmente, se exploran las fuentes documentales, analizando el contexto y la intención de su representación gráfica en las distintas fuentes.

En las actuales sociedades cosmopolitas los continuos contactos, metamorfosis y fusiones que se producen entre diferentes cocinas expresan la tensión existente entre el mantenimiento de la identidad cultural y el cambio. Alimentarse se ha convertido en un signo de clase, en una forma de distinguirse, en un mecanismo a través del cual se construye nuestra identidad personal. Y todo ello se produce en el marco de un proceso de globalización que tiende a homogeneizar los productos en una especie de "supermercado global" regido por la hiperespecialización, la publicidad engañosa y las leyes del mercado capitalista, amenazando, así, la diversidad de los ecosistemas alimentarios. En este habitus surgen movimientos de resistencia que reivindican, desde una visión edénica de neoruralidad, particularismos alimentarios que reconozcan el valor folk de las tradiciones culinarias de antaño. Estamos, pues, ante un panorama complejo que se aborda a lo largo de las páginas de este texto con el objetivo de desbridar las principales relaciones que hay entre la alimentación y la cultura desde un enfoque biocultural que aúne los conocimientos de las ciencias nutricionales y biomédicas con los aportes de la antropología.
